What does folding do?

Bakers use folding to strengthen the gluten and add air into the dough, without kneading.

Which fold should I use?

This is largely up to personal preference. Most recipes will specify a folding technique, although you can usually substitute your favorite technique instead if desired.

The coil fold and stretch & fold have the advantage that you can usually do them in the bulking container or bowl, so there's no need to move onto a work surface.

Tip

Dip your hands in a small amount of water in-between each fold. This will help prevent the dough sticking to your hands.
